IngredientsServes: 4

  • For the batter
  • 2 tablespoons garam masala
  • 3 tablespoons plain flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garlic granules
  • 1/2 teaspoon turmeric powder
  • pinch saffron
  • 2 teaspoons tomato puree
  • 35ml water
  • For the pan
  • 4 medium onions sliced, approx 1-2cm thick
  • 1 tablespoon olive oil
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon chilli powder
  • vegetable oil for frying

MethodPrep:15min ›Cook:20min ›Ready in:35min

  1. Fry sliced onion in olive oil over a medium heat till they become translucent. Try not to brown them.
  2. Add pan spices, stir in evenly till takes on a uniform colour. Remove from heat.
  3. Put onions in a mixing bowl. Stir in the dry batter ingredients. Once onions are coated combine the water and tomato puree. Pour the tomato mix into the onion mix. Stir together. The mix should be easy to stir but not sloppy or sticky. Add some more water a teaspoon at a time if it's sticky.
  4. Shallow or deep fry till golden brown and crispy. Serve hot with raita or chutney as a dip.
