Melt the butter in the olive oil.
Add the crushed garlic and a pinch of the listed spices and mix well.
Add a pinch of salt and let the butter on the fire, to flavor, 4-5 minutes.
Wash the potatoes well with the kitchen sponge, with the abrasive part, without peeling them.
We then place them between two forks and slice them thinly, just as much as the forks allow, keeping the base untouched by the knife.
In this way we create that attractive fan, but also useful for baking potatoes.
Place the fried potatoes in a baking dish or tray.
Take a teaspoon of flavored butter and drizzle among the potato slices.
Then pour the rest of the butter over the potatoes, sprinkle a little more salt and a little corn, strain between slices and a few fresh basil leaves, for extra flavor and freshness, possibly add a little more butter, if not enough in the pan and put the potatoes in the oven at 190 degrees C for about an hour.
Halfway through, remove the tray from the oven and drizzle the butter over the potatoes from the pan, so as not to dry out during the heat treatment.
5-6 minutes before turning off the heat, toss a handful of grated mozzarella over the potatoes.
We serve these fan potatoes, with flavored butter, sprinkled with greens, with a steak, or as I said, with various sauces.
They are delicious in any combination.
