Ingredients

  • 6 Cups frozen berries
  • 1/2 Cup sugar
  • 1/4 Cup flour
  • 2 Cups granola
  • 2 Tablespoons melted butter
  • Vanilla yogurt or ice cream, for serving (optional)

Directions

Preheat the oven to 375 degrees.

In a large bowl, gently toss together the berries, sugar, and flour then transfer to an 8-inch baking dish. Set aside.

In a medium-sized bowl, toss together the granola and butter then scatter over the berries in the dish. Bake until the top is golden brown and berries and their juices are bubbly, about 30 minutes. Let cool, then spoon into dishes, and serve with yogurt or ice cream on top, if using.

Since this recipe can be enjoyed throughout the year, the special perk of this recipe is that it can be made with fresh or frozen berries. I made this recipe with fresh berries because I can control the moisture a little easier, but it can be cheaper to buy frozen berries in the off-season. Be sure to check my notes below on using frozen berries to prevent an overly wet Easy Mixed Berry Crisp!

Simple Mixed Berry Crisp

Last month I made this mixed berry crisp for my dad’s birthday. I served it at the end of a BBQ and it was well received!

See what was left when I went to sneak in a second helping (everyone beat me to it!).

The fruit in there is a combination of strawberries and blueberries. You are welcome to use whatever berries you have laying around. Maybe you picked some berries on the side of the road? That sounds romantic. That should have been on my Summer Bucket List.

Without further adieu, here’s a very simple way to pull together a crisp in a short amount of time.

Let’s gather our ingredients:

We make the crumble topping.

I use my hands. It’s cheaper than therapy.

Let’s get an overview before.

Let’s get an after shot when it comes out of the oven and the berries are bubbling and the crumble is browned.

Let’s take a look at that berry juice. So good scooped on top of ice cream or with a dollop of whipped cream.


Do you ever find yourself needing to put something really really great on the table, but you just don&rsquot have hours to spend in the kitchen mixing and baking and checking and frosting and on and on and on?

I LOVE baking a creating, but hours making messes in the kitchen also often means hours cleaning up those messes, or watching them sit there until someone takes pity on me and helps a girl out.

Either way though, sometimes the time &ndash It just gets away from me.

If you are anything like me, try this awesome easy berry crisp.

You don&rsquot even REALLY have to measure this. I mean &ndash you CAN, but it isn&rsquot completely necessary.

You just toss enough frozen berries in a pie plate to fill it up, slightly heaping. Then pour a cup or two of sugar in over the berries. If you want to be fancy, use equal parts raw sugar and white sugar.

Top it with a quick crisp which is literally just equal parts butter, brown sugar, flour, and oats with a dash of cinnamon. You can use a food processor, or if you don&rsquot feel like dirtying the dishes, just use your hands and dive in there.

Top it, bake it, and serve it with a big scoop of vanilla bean ice cream, or sweetened whip cream.

Easy Oatmeal Blueberry Crisp

Do you have that go to fruit that you eat all of the time and always have in your house? I would have to say ours in blueberries and bananas. I always have these two things in the kitchen and we go through a lot of them! We can easily add these two fruits to make things for breakfast or even sweet treats like cookies! Remember these Easy Banana Oatmeal Cookies? They’re only 2 ingredients! Lately, we have been on a blueberry streak. We have been making muffins almost every Sunday. So….I decided to change it up a little bit and make this Easy Oatmeal Blueberry Crisp! It only takes a handful of ingredients and it is delicious!

  • 6 tbsp of butter, softened
  • 5 cups of blueberries
  • ¾ cup of brown sugar
  • ¾ cup of flour
  • 1 cup oats (Regular or Quick)
  1. Preheat the oven to 375 degrees Fahrenheit and lightly butter an 8" square baking dish.
  2. In a large bowl, combine ½ cup brown sugar and ¼ cup of the flour. Mix well to eliminate any clumps.
  3. Add the fruit and toss until evenly coated.
  4. Transfer mixture to the prepared baking dish.
  5. Stir together oats, remaining brown sugar and remaining flour.
  6. Using a pastry tool or 2 forks, blend butter into oat mixture until well combined.
  7. Spread the topping over the fruit.
  8. Bake until the top is golden brown and the fruit is bubbly (about 40 minutes).
  9. Let cool 10-15 minutes and serve warm.

Since we were having this Easy Oatmeal Blueberry Crisp for dessert, I also served it with a scoop of vanilla ice cream on top. Or, you could just have the crisp heated up for breakfast! Like I mentioned above, this recipe is great because it includes a lot of ingredients you likely already have on hand. The one extra you may need to snag is the Kodiak Cakes blueberry muffin mix! Trust me &mdash it&rsquos worth it!

  • Old-fashioned oats
  • Pecans (or any chopped nuts you have on hand!)
  • Butter or ghee
  • Berries &mdash fresh or frozen, whatever kinds you like!
  • Cinnamon
  • Vanilla extract
  • Syrup OR honey

What makes this healthy berry crisp recipe healthy?

This Healthy Berry Crisp is a delicious dessert that you should feel good about eating! Why, you ask?

First off, berries are low in calories but loaded with nutrients, including antioxidants, which may help reduce oxidative stress and disease risk. Berries are also a good source of dietary fiber, as well as other beneficial vitamins & minerals, like vitamin C, manganese and more.

The pecans on top don&rsquot just add nice texture & crunch &mdash they also provide heart-healthy fats, which contribute to satiety. Plus, they are also super tasty!

Serving & storage suggestions

As you can see in my photos, I chose to serve up my Healthy Berry Crisp alongside some vanilla bean ice cream, because YUM. But I think it would also be super yummy with some vanilla Greek yogurt for a slightly healthier option!

You could also serve it with a dairy-free yogurt alternative or dairy-free ice cream if you have special dietary needs. There are tons of ways to enjoy this tasty treat!

I suggest storing any leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave for about 30 seconds, or until it reaches desired temperature! When I made this, Ethan and I enjoyed it for days, and the leftovers were equally yummy!


A berry crisp recipe with fresh or frozen fruit

This berry crisp recipe is fully customizable for whatever season you’re in! It can be hard to find great fresh berries, especially in mid-winter. So you can use frozen mixed berries: store them in your freezer and you can whip up this dessert on moments notice! Here are a few notes:

  • Use any type of berries you like. Blackberries, blueberries, raspberries, and strawberries or a mix of the three work!
  • Frozen berries just need a quick rinse. Rinse them in warm water in a strainer for 1 minute. This won’t thaw them fully, but it will start the process.
  • The bake time depends on the topping! The exact timing depends on your oven, but it’s based on when the crumble topping turns golden brown. Both frozen or fresh berries will be done once the topping is!

Easy Granola Berry Crisp

In a bowl, combine flour and butter. Using a fork, cut butter into flour until crumbly. Add granola and mix until well-combined. Set aside.

In another large bowl, combine ingredients for berry mixture and mix until well-combined. Pour berry mixture into a 9 x 12 baking pan and cover with granola topping. Bake for 45 minutes.

Serve warm alone or with ice cream.

Ingredients

5 cups mixed fresh blueberries, strawberries and blackberries (4 6-ounce containers)
2 tablespoons lemon juice
⅓ cup sliced almonds
2 tablespoons unsweetened coconut flakes
⅓ cup old-fashioned rolled oats (not quick or instant oats)
⅛ teaspoon nutmeg
⅛ teaspoon cinnamon
1 tablespoon honey
1 tablespoon cornstarch (optional, to reduce liquid)

Instructions

  1. Heat the oven to 350 degrees. In a large bowl, toss together the blueberries, raspberries and lemon juice. You may add 1 tablespoon of corn starch to fruit mixture to reduce baking liquid from forming in tray. Transfer to a 1½-quart baking dish.
  2. In a small bowl, combine the almonds, coconut, oats, nutmeg, cinnamon, and honey. Use your fingertips to combine together, and then sprinkle evenly over the berries.
  3. Bake until the crisp topping is golden brown, 20 to 25 minutes. Serve warm.
